How a stand-alone ice maker makes ice

Most clear-ice machines, both home undercounter units and commercial heads, run water over a chilled evaporator plate or grid. Water freezes in layers, which is why the cubes come out clear, and whatever doesn't freeze drains back to a reservoir. When the cubes reach the right thickness, a harvest cycle warms the plate, usually with hot refrigerant gas, and the ice drops into the bin. A thermostat, sensor or bin switch tells the machine when to stop.

Nugget machines work differently. An auger turns inside a chilled cylinder, scraping off flakes and pressing them through a die into soft chewable pellets. They're sensitive to scale and need regular cleaning more than most.

Nearly all of these machines drain constantly. A gravity-drain unit needs a floor drain or standpipe lower than itself; a pump-drain unit lifts water to a higher drain line. A lot of ice maker service calls turn out to be about water getting in or out, not about refrigeration.

Ice machine symptoms and their causes

Start with the symptom. Water supply, drain and scale explain more of these than a refrigeration fault does.

No ice at all

Checks you can safely make

  1. Confirm the water supply valve is fully open and the filter isn't past its replacement date. A pinched supply line behind the unit is common after it's been slid back in.
  2. Vacuum the louvers at the bottom front. Undercounter machines take in and push out air there, and a dusty grille alone can cut production sharply.
  3. Look at the drain. For a gravity drain, make sure the line runs downhill the whole way and isn't dipping into standing water. For a pump drain, listen for the pump when the reservoir empties.
  4. Check whether it's due for cleaning. The manual gives an interval and names the cleaner to use; using the wrong chemical can damage the evaporator coating.
  5. If the bin is full and the machine has stopped, that's normal. Empty some ice and see whether it restarts.

Before you touch anything: Unplug the machine and close its water valve before pulling it out of a cabinet. Leaks under a counter often reach an outlet; if the floor is wet near the plug, switch off the breaker first. Use only the cleaning and sanitizing products the manufacturer specifies.

What happens on an ice maker visit

We watch a full cycle when there's time: water fill, freeze, harvest, drop. That shows most faults quickly. Then the technician checks the water valve and pump, the drain path and pump, the condenser and fan, the sensors that end freeze and start harvest, and the refrigeration side last.

For an undercounter unit in a basement bar, we need to know where it drains and whether we can pull it out of its opening. For a restaurant or bar machine, a visit outside the rush is easier on everyone. Either way you get the diagnosis and a price before any repair.

Repair or replace an ice machine?

Valves, pumps, sensors, bin switches and drain pumps are all reasonable repairs. A compressor or evaporator on an older residential undercounter unit is where the math starts to lean toward replacement, particularly if scale has pitted the evaporator surface.

Water first: is the supply valve open, is the filter current, and is the line behind the unit kinked? Then vacuum the front louvers. Past that, the common causes are scale coating the evaporator, a water valve or recirculating pump that's quit, and a bin sensor stuck telling the control the bin is full.

Your manual sets the schedule. A bar machine running flat out, or water that leaves heavy deposits, shortens it. Stick to the descaler and sanitizer the maker specifies; the wrong chemical can strip the evaporator's plating.

Stand-alone ice makers drain melt water constantly. If the unit uses a pump to lift water to an overhead drain, a failed pump or blocked line backs water up into the cabinet. On a gravity drain, a line that runs uphill anywhere, or a floor drain that's slow, does the same. Unplug it and shut the water off until it's sorted out.
