How Hoshizaki builds its ice makers

A Hoshizaki KM cuber makes its crescent cubes by spraying water up into inverted cells on a stainless evaporator plate. When a thermistor on the evaporator outlet reaches the right temperature, the board starts harvest: hot gas warms the plate while incoming water runs over its back to help release the cubes. A float switch in the water tank tells the board when there's enough water to freeze, and a bin control stops production when the bin is full. Scale on the evaporator and spray tubes, a float switch that sticks, or a weak water pump are the common reasons for slow or poor ice. Flakers and cubelet models work differently, freezing ice in a cylinder and pushing it out with an auger.
