How Gaggenau builds its ovens

Gaggenau wall ovens come in the 400 and 200 series, with conventional, combi-steam and speed ovens often stacked in one column. Their electronics depend on a cooling fan that keeps running after the oven switches off, and if it fails, the control overheats and starts throwing errors. Self-cleaning models add a motorized door lock. Combi-steam ovens use a water tank or a plumbed supply and drain, a pump and a steam generator, and they need descaling as the manual directs; skip it and the steam system scales and quits. Heating elements, the cavity sensor and the core temperature probe complete the usual list. Large side-hinged doors on some 400 series ovens also put steady strain on their hinges.

Better not. Descaling protects the pump and generator from mineral buildup. Follow the manual's procedure with the recommended descaler. If the oven still makes no steam afterward, the pump or generator may need replacing.

Yes. Each oven is its own unit. Some repairs happen from the front with the door open or the cavity panels off; others need the oven slid out of the cabinet, which we do carefully to protect the trim and the units above and below.
