How La Cornue builds its ovens

La Cornue's vaulted oven uses its curved ceiling to circulate heat naturally, which is why many models cook evenly without relying on a fan. Gas ovens use a burner under the floor governed by a thermostat, and on models with flame safety a thermocouple shuts the gas off if the flame goes out. Electric ovens use elements and a thermostat instead. Because the vault does the circulating, even heat depends on the door sealing properly, and a slow or uneven oven often has a thermostat drifting out of calibration, a weakening thermocouple, or a damaged door gasket. The doors are heavy, so their hinges wear, and a door that no longer closes square lets heat escape along one side.
