How Viking builds its ovens
A Viking gas oven usually lights with a hot-surface igniter, often called a glow bar, wired in series with the oven safety valve. As the igniter ages it draws less current, and at some point it still glows but no longer opens the valve, and the result is a long wait for flame or none at all. That makes it the first part tested on a no-bake complaint. Convection models add a rear fan motor that can grind or stop. Older ovens with mechanical thermostats can drift, while electronic models rely on a temperature sensor and control. The doors are heavy, and worn hinges leave a gap that leaks heat and makes cooking uneven.

Very often, yes. On these ovens the igniter must pull a certain amperage before the gas valve will open. A weakening igniter can glow bright orange and still fall short. We measure its draw against the spec before replacing the igniter or the valve.
It depends on the model. Some older mechanical thermostats can be adjusted, and some electronic controls allow an offset. If the thermostat or sensor is failing, it is replaced rather than adjusted.
