How Vulcan builds its ovens

Vulcan convection ovens heat with a gas burner or electric elements and use a blower to push hot air through the cavity. When the blower stops, the oven heats unevenly or not at all, since many models won't fire the burner without airflow. Door switches control the blower on many models, so a worn switch can stop the fan every time the door closes. Gas convection ovens use electronic ignition with flame sensing, while the ovens under a Vulcan range often use a standing pilot, a thermocouple and a safety valve that shuts gas off if the pilot goes out. Mechanical thermostats drift with years of use and can often be recalibrated.
