How Everest builds its freezers
An Everest freezer uses the same basic refrigeration as its coolers, with extra parts to deal with ice. The evaporator is defrosted on a cycle run by the controller, using an electric heater, and the drain line leaving the cabinet has its own heater so meltwater doesn't refreeze on the way out. If either heater fails, ice grows on the coil or in the drain, airflow stops and the cabinet warms. Heaters in the door frame keep the gasket from freezing to the cabinet; when one fails, the door sticks and the gasket tears on the next pull. In a busy kitchen, doors propped open during a delivery load the coil with frost faster than defrost can clear it.

Please don't. A knife through the coil turns a defrost repair into a refrigerant repair. Move the product and let us find why defrost isn't clearing the ice. A manual defrost buys time, but the heater, sensor or drain fault behind it has to be fixed or the ice comes back.
Freezers heat the door frame so the gasket can't freeze to the cabinet. When that heater fails, the gasket bonds to the frame and tears when someone pulls the door. We test the heater circuit and replace the gasket once the cause is fixed.
