How Hoshizaki builds its freezers

A Hoshizaki freezer handles frost the way most commercial freezers do. Electric heaters defrost the evaporator on a schedule set by the controller, a sensor ends defrost once the coil is clear, and the drain line has its own heater to keep meltwater moving. The door frame is heated too, so the gasket can't freeze to the cabinet. When any of those heaters fails, the result is predictable: an iced coil and a warming cabinet, a frozen drain with water on the floor, or a door that sticks and tears its gasket. Frequent door openings during service load the coil with frost, so a freezer beside the line works harder than one tucked in a storeroom.
