How Everest builds its refrigerators
Everest refrigerated cabinets are self-contained, with the condensing unit at the top or the bottom depending on the model, and where it sits decides how fast it clogs. A bottom-mounted unit on a prep table or chef base draws in floor dust and cooking grease and loads up far quicker than a top-mounted one on a reach-in. Inside the box, an evaporator fan moves air across the coil; when that fan stops, the coil ices while the food warms. Door and drawer gaskets are the other big failure, especially on chef-base drawers that take hits from carts and knees. Controllers and probes fail less often, but a bad probe can make a unit short-cycle or run without stopping.
