The weak points are the ones every commercial refrigerator shares in a kitchen: a condenser clogged with dust and grease, an evaporator fan that stops, gaskets torn by carts and hips, and condensate that doesn't drain. Prep tables add a food rail that struggles if lids stay open or pans are overfilled. When the controller shows an alarm it gives us a starting point, but we still test the part it points to before replacing anything, because a clogged condenser can set off the same alarm as a failed fan.
