How Gaggenau builds its cooktops
A Gaggenau Vario row can combine gas burners, a wok burner, induction, a teppan yaki plate, an electric grill and table ventilation, each module with its own controls. The gas modules use spark ignition and thermoelectric flame safety: the knob has to be held in for a few seconds while a thermocouple warms, and a weak thermocouple lets the flame die as soon as the knob is released. Induction modules rely on power boards, coils and a cooling fan. The teppan yaki and grill carry heating elements and temperature controls of their own. The solid metal knobs turn switches and valves underneath that collect grease and wear with years of use, which shows up as a knob that feels rough or a setting that won't hold.

The flame safety system needs the thermocouple to heat up and hold the valve open. If it's weak, dirty or knocked out of position, the flame dies when you release the knob. We clean or replace the thermocouple and check the valve.
Sometimes, when the same or a compatible module with the same cutout is still made. Older modules may have no direct replacement, which is another reason repair usually makes sense. We check compatibility before recommending anything.
