How La Cornue builds its cooktops

Château ranges can also include a French top, a heavy cast plate heated by a central burner that gives a gradient from a hot center to cooler edges. Burner problems fall into a few patterns: no spark, a flame that dies when the knob is released, and uneven or lifting flames from blocked ports or a burner head sitting out of place. The French top can be slow to come up to heat if its burner ports or ignition are fouled. Valves can stiffen with age, making a knob hard to turn or a setting drift.
