How Vulcan builds its cooktops

Vulcan griddles and hot tops use gas burners under a thick steel plate, with thermostatic controls on some models and manual valves on others. Uneven heat across the plate usually traces to clogged burner ports or, on thermostatic models, a thermostat or its sensing bulb that's out of calibration or damaged. Pilots go out when the orifice clogs, when a draft from the hood blows across them, or when the thermocouple wears. Carbon and grease that drop below the plate over time can block burners and air openings. We clean the burners, check each pilot and thermocouple, and test the thermostat against a surface thermometer before replacing parts.
