How AGA builds its cooktops
The top of a heat-storage AGA has two hotplates: a hotter boiling plate and a gentler simmering plate, each covered by an insulated lid that holds the heat in when not in use. A plate that takes too long to recover after cooking points to low output from the heat source or a thermostat problem, and on controllable models the plate may have its own element. Worn lid hinges or damaged lid linings let heat escape. On AGA range cookers the hob is a normal gas or induction top, where spark ignition, simmer control and induction pan detection are the usual issues.

Hotplates do drop in temperature with heavy use, and keeping the lid down between uses helps them recover. If recovery is much slower than it used to be, the heat input or thermostat may have changed and deserves a check.
